This tasty Creole rabbit can also be baked in the smoker or outdoor barbecue. Serve with roasted sweet potatoes, black-eye peas and fresh oranges. Cray-fish make a nice appetizer. Preparation time, 30 minutes; Cooking time, 100 minutes. Serves 4 to 6.
1 fryer rabbit, 1.5 kg, cut up 1 15 mL cooking oil 1 tbsp 1 can, tomato soup (284 mL) 1 120 mL chopped green pepper 1/2 cup 120 mL chopped onion 1/2 cup 120 mL sliced gumbo (okra) 1/2 cup 5 mL salt 1 tsp 2 mL ground oregano 1/2 tsp 1 mL ground white pepper 1/4 tsp
In a skillet, brown rabbit pieces in hot oil. Place rabbit in a 2 L (2 qt) casserole. Mix remaining ingredients and pour over rabbit. Bake, covered, at 180°C (350°F) for 1 hour. Remove cover during last 15 minutes.
